How to cook a lobster

To steam.

Make sure you defrost your Yorkshire lobster thoroughly before cooking and eat within 24 hours.

To defrost. Remove lobster from outer packaging. Place on dish and leave over night to defrost in refrigerator.

Before cooking. Remove packaging. Boil 1 ltr ofwater. Place lobster in steamer gently avoiding any splashes to your hands.

During cooking. Take care that water is topped up and that steamer does not boil dry.

Twist the claws and legs away from the body and tail. Crack each claw and leg with a nutcracker or small hammer, and pick the white meat out using a lobster picker.

Using a knife, cut down the middle of the tail part of the lobster.

Seperate the tail-piece from the body by arching the back until it cracks, twist and pull.

Bend back and break the flippers off the tail piece.

Insert a finger or fork where the flippersbroke off and push the meat out.

To cook on the hob.

Before cooking. Boil enough water to cover the lobster. Add lobster to pot and boil avoiding any splashes to your hands.

Bring to boil. Simmer gently.

Drain pot. Check food is hot. Enjoy with a friend or on your own.
